Vegetable Dischi Volanti Pasta

Ingredients:
8 ounces dischi volanti pasta
1/2 cup frozen green peas
1 table spoon olive oil
1 large onion, finely chopped
1 garlic clove, crushed
1 small red bell pepper, cut into small strips
1 cup small broccoli florets
1 medium zucchini, cut into matchsticks
1/2 cup heavy cream
1/2 cup vegetable broth
1/4 cup grated Parmesan cheese
salt and black pepper powder
Method: Cook the pasta following the instructions on the package and add the peas 4 mins before the end of the cooking time. Drain the pasta and the peas. Set aside. Heat the olive oil in a large saucepan and saute the onions and garlic for 1 min. Add bell pepper, broccoli, and zucchini and saute for 8-10 mins, or just until tender. Stir in the cream and vegetable broth. Bring it to boil and reduce by one-third. Add Parmesan and season with salt and pepper. Add the drained pasta & peas, then toss together. Serve with extra Parmesan to sprinkle on top if desired.
