Pineapple Unniyappam

Ingredients

Rice flour: 1/2 kg

Maida: 100 gm

Baking powder: 1/4 teaspoon

Salt: A pinch

Coconuts bits/Thenga kothu roasted in ghee: 1 cup

Chopped pineapple: 2 cup

Black sesame seeds: 2 teaspoon

Sugar: 2 tablespoon

Jaggery syrup: 3 cups

Oil: To fry

Ghee: 1 teaspoon

Method: Cook the cleaned and cut pineapples in sugar syrup for 15 minutes and allow it to cool. Make a batter with rice flour, maida, salt, cut coconuts, baking powder, cooked pineapple, sesame seeds, and ghee. To this batter add warm jaggery syrup and make a batter of dosa consistency. Keep it aside for 3 hours. If the batter has thickened, add milk/water to make it to batter consistency. Place the mould pan on the stove, and pour equal amounts of oil into each round. When hot, simmer the flame and pour half ladle of batter into each round. Now increase the flame and allow them to cook. Flip the appam to the other side using a fork. Once the unniyappams are brown on both sides, remove them from the pan and allow them to drain on paper towels. Repeat the process with the rest of the batter. Serve and enjoy!
