Ingredients
For Meat Sauce:
1/2 pound lean ground beef
1 large onion, finely chopped
4 garlic cloves, minced
2 cans (15 ounces each) tomato sauce
1 can (14-1/2 ounces) diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried rosemary, crushed
1 to 2 teaspoons sugar
1/2 teaspoon salt
1/8 teaspoon pepper
For Gnocchi
14 ounces potatoes
8 ounces sweet potatoes
1/2 small pumpkin or medium butternut squash, seeded and cut into wedges
a pat of butter
1 cup all purpose flour
1 egg yolk, lightly beaten
To taste salt and pepper powder
4 cups vegetable broth
Method: To make the meat sauce: In a large saucepan, cook the beef, onion, and garlic over medium heat until the meat is no longer pink, drain. Stir in tomato sauce, diced tomatoes, and seasonings. Bring to boil. Reduce heat, cover and simmer for 15-20 mins to allow flavors to blend.
To make the gnocchi: Preheat the oven to 350 degrees F. Prick the potatoes all over with a fork. Place on a large baking sheet with pumpkin or butternut squash wedges, skin side down. Melt the butter and use it to brush the flesh of the pumpkin or butternut squash. Bake the vegetables for 1 hour or until they are tender. Remove from the oven and let cool. Cut the potatoes in half and scoop the flesh into a bowl, along with that of the pumpkin or butternut squash. Mash them thoroughly and put into a large bowl. Sift in the flour, add egg yolk, and mix with a wooden spoon. Season with salt and pepper. Fit a piping bag with 3/4 inch tip and fill with some of the mixture. Pipe lengths of gnocchi onto a floured baking sheet, then cut into 3/4 inch pieces before poaching in boiling vegetable broth or squeeze the mixture out of the piping bag and cut into 1-inch lengths so that the pieces drip out straight into the boiling broth. Cook for about 1 minute, until the gnocchi float to the surface. Remove them carefully with a slotted spoon and arrange them on a baking sheet. Cook the gnocchi in about 4 batches. Place in a large bowl, top with meat sauce.
