Amritsari Machli/ Batter Fried Fish - Marinated fish fillets coated with a thick batter of gram flou

Ingredients:

500 gms boneless fish cubes (Hammour) Marinade: 2 tbsp lemon juice 3 tsp chilli powder (according to ones taste) 2 tbsp ginger garlic paste 1/4 tsp ajwain crushed (carum seeds) 1/2 tsp roasted cumin powder 3 tbsp besan (chickpea flour) 1 tbsp maida (plain flour) Salt to taste

Few drops of orange red colour (optional) 2 cups oil for deep frying Method: Wash the fish and pat dry on a kitchen towel. In a glass bowl, combine all the ingredients of marinade to make a smooth paste with sticky texture.Use drops of water if required.Add fish pieces to it and mix well and set aside in a refrigerator for 30 min to 1 hr.Heat oil in a saucepan.Fry the pieces in batches till crispy and cooked. Drain on a kitchen towel. Sprinkle lemon juice and chaat masala and serve hot.
