Thalassery Fish Biryani

Ingredients
King Fish - 450g
Water – 4-5 cups
Thick Curd - 3 tsp
Cooking Oil – for cooking
Biryani Rice - 3-5 cups
Onions - 4 nos. (big)
Tomatoes - 3 nos. (big)
Garlic - 5-6 pieces
Green Chillies- to taste
Chilli Powder - 1 tsp
Turmeric Powder - ½ tsp
Fish Biriyani Masala- 2 tbsp
Coriander Powder - 2 tbsp
Salt - to taste
Lemon Juice - 1 tsp
Coriander Leaves - a handful
Ghee - for frying
Cloves - 1 tsp
Cardamom - 1 tsp
Cinnamon - 1-2 sticks
Bay Leaves - 4-6 leaves
Star Aniseed - 5-8 seeds
Fried cashew nuts & raisins-10-15
Chopped coriander leaves-1/2 cup
Method: Prepare a marinade mixture with teaspoons of chilli Powder, turmeric powder, and salt. Wash, clean and cut the fish into medium pieces. Coat the fish pieces in this marinade mixture. Set the marinated fish aside for about 30 minutes.
Set aside the washed basmati/biryani rice for some time. Heat a vessel with ghee and fry the rice for a few minutes. Add some water into the rice, along with cinnamon sticks and a little salt. Cook the rice with 4-5 cups water.
Preparing Fish Biriyani Masala: Crush a piece of ginger, few garlic pieces and green chilli to make a crushed paste. Wash and slice the onions and tomato to get sliced vegetables. Mix together the crushed paste, sliced vegetables, salt, curd, lemon juice, turmeric powder, & chilli powder. Sauté the mixture for about 10-15 minutes. Meanwhile, fry the marinated fish pieces lightly and drain excess oil on a paper towel. Add the fried fish to the masala mixture and fry for some time. Then, add the fish biriyani masala powder, coriander powder, mint leaves, and little lemon juice and cook for some time.
Layering the Malabar Fish Biriyani: Fry onions in ghee till golden brown and keep aside. In a vessel, arrange rice and the fish Biriyani masala in layers. Garnish with fried cashew nuts & raisins and chopped coriander leaves. Cover the container with an aluminum sheet or a wet paper towel. Preheat the fish biriyani container for few 10-15 minutes. Thalassery Fish Biriyani is ready to be served.
