Potato Thoran

Ingredients

Potato- 2 large

Oil-1/5 tbsp

Mustard Seeds-1/2 tsp

Dried Red Chillies-2 broken

Curry Leaves-A sprig

Grated Coconut-1 cup

Turmeric Powder-1/4 tsp

Garlic-2 to 3 cloves

Green Chillies-2 or 3 split

Salt-To Taste

Method: Cut the potatoes into thin strips. Put them in a vessel filled with water to prevent discoloration (drain the waer before you start cooking). Crush the garlic and green chillies in a mortar and pestle. Combine grated coconut witht turmeric powder, curry leaves, and crushed garlic-green mixture. Mix well with your fingers. Heat oil in a pan at medium heat and splutter mustard seeds. Fry dried chillies and curry leaves. Add the drained potatoes, coconut mixture, and enough salt. Mix well. Sprinkle 2-3 tbsp water and cook covered for about 10 mins at mediumlow heat stirring in between, until the potatoes are done. Open and stir for 1-2 minutes until completely dry. Serve the potato thoran with rice.
