Date Rolls in Shredded Coconut

Ingredients

  • 3 cups desiccated coconut

  • 2 cups (200g) pitted dates

  • 10 peeled almonds

Method: Place 2 cups of coconut and the dates into a blender or food processor. Process on high speed for 3-4 minutes, pausing to scrape down sides as needed, until the mixture becomes a smooth paste. Remove from processor and roll them into teaspoon-sized rolls. Roll each date roll in remaining 1 cup of coconut. Place a peeled almond on top of the date roll to make it pretty. Place the rolls in the fridge and let them harden for about an hour.
