Mathi-Chaala Varuthathu/Kerala Style Fried Sardines

Ingredients

Sardines/Mathi/Chala: 5-6 numbers

Ginger-garlic paste: ½ tsp

Turmeric powder: ¾ tsp

Red chilly powder: ½ tsp

Black Pepper powder: 1 tbsp

Lemon juice: 1 tsp

Oil: As required

Curry Leaves: Few

Salt: To taste

Method: Clean the sardines well and make oblique gashes on both sides of the fish. Grind all other ingredients into a paste. Marinate the fish with this paste and keep it aside for half an hour. Heat a frying pan and pour some oil in it. When the oil gets heated, add the curry leaves, and place the sardines over the curry leaves and fry it on medium heat turning them to the other side in between. Once crispy, remove from heat and transfer it to a paper towel. Serve hot with rice. (Adding curry leaves before frying the fish will give a nice aroma and the fish will not stick to the frying pan)
