Beef Stir Fry Noodles

Ingredients:

  • ½ pounds beef

  • 1 pack of egg noodles

  • 3 Tbsp. soy sauce

  • 1 tsp. brown sugar

  • 1 shallot, minced OR 1/4 cup chopped onion

  • 4-5 cloves garlic, finely chopped

  • 1 thumb ginger, sliced thinly

  • 1 cup thinly sliced zucchini

  • 1 red pepper, sliced into thin strips

  • 1 yellow pepper, sliced into thin strips

  • 1 carrot, sliced

  • 2-3 Tbsp. vegetable oil

  • STIR-FRY SAUCE:

  • 2/3 cup good-tasting chicken stock

  • 3 Tbsp. oyster-flavored sauce

  • 3 Tbsp. chilli sauce

  • 1 Tbsp. fish sauce

Method: Slice beef as thinly as you can. Stir together soy sauce and brown sugar and marinate it with the beef for 30 mins or more. Boil noodles. Drain and rinse with cold water. Combine all Stir-Fry Sauce ingredients in a bowl. Heat a large pan over medium-high heat. Add 2-3 Tbsp. oil and swirl around. Then add the shallot, garlic, ginger, and stir-fry 1-2 minutes. Then add the beef together with its marinade. Stir-fry 3 minutes, or until beef is lightly cooked. As you stir-fry, add a little stir-fry sauce (2-3 Tbsp.) - just enough to keep ingredients frying nicely. Add the zucchini and peppers and continue stir-frying 1-2 minutes. Stir-fry until vegetables have softened but as still bright with some crispness to them. Finally, add the noodles plus all remaining stir-fry sauce. The noodles will absorb most of the sauce. Cook for another 5 mins. When noodles are cooked and most of the sauce has been absorbed, switch off heat and taste-test. Serve noodles in bowls or on plates.
