Ingredients
6 large peppers (you can use bell peppers or long peppers)
1lb beef, Ground
1⁄2 cup onion, Chopped
2 tomatoes, chopped small
1teaspoon salt
1teaspoon Worcestershire sauce
1 cup chopped carrots
1cup cheddar cheese, Shredded (about 4 ounces)
Method: Cut tops from the peppers; discard seeds and membranes. Cook the whole peppers, uncovered in boiling water for about 5 minutes; invert to drain well. Sprinkle insides of peppers lightly with salt. In a skillet cook ground beef, onion, carrot, and add salt to taste and cook until the meat is browned and vegetables are tender. Drain off excess fat. Add chopped tomatoes, Worcestershire sauce, and a dash of pepper powder. Cover and simmer about 20 minutes. Stir in cheese. Stuff peppers with meat mixture and sprinkle cheese on the top. Place in a 10x6x2 baking dish. Bake, covered in a 350 degree oven for 30 minutes. Remove from the oven once the cheese has melted completely. Serve hot.
