Peas and Parsley Omelette

Ingredients
Butter - 1 tsp
Peas - 3 tbsp
Cheddar cheese - 2 tbsp ( Grated )
Parsley - 1 tsp ( Chopped )
Olive oil - 1 tsp
Eggs - 2
Salt to taste
Freshly ground black pepper - ¼ tsp
Method: Heat butter in a pan. Add peas and salt and cook for 3-4 minutes. Add parsley and remove the pan from heat. Heat olive oil in a frying pan. Whisk eggs with salt and freshly ground black pepper. Pour the egg mixture in the pan and let it set until 90%. Sprinkle cheese on top. Keep the filling in the centre and roll the omelette. Garnish with chopped parsley and serve hot with garlic bread on the side.
