Almond Cookie Biscuits

Ingredients

  • 100g ground almonds

  • 150g plain flour

  • 100g sugar

  • 3/4tsp baking powder

  • 3/4tsp baking soda

  • A pinch salt

  • 100ml oil

  • 1 egg yolk, beaten

  • 1 tablespoon honey

  • 1 drop yellow color (optional)

Method: In a medium bowl, combine flour, sugar, baking powder, baking soda and salt and keep aside. Add the ground almonds to the mixture. Blend oil, eggs, yellow color, & honey with the above mixture to form nice dough. Heat the oven to 180 degrees C. Roll the dough into ~2.5cm balls, and place on a baking tray lined with parchment paper. Repeat until all the dough is used up. Using a pastry brush, lightly glaze the tops of the cookie balls with the beaten egg yolk. Bake for 15-20 minutes, or until the cookies become slightly golden. Leave to cool on a wire rack. Garnish with sliced almonds. Serve with tea as a snack.
