Blueberry Cream Cheese Stuffed French Toast

Ingredients
6 Thick Slices whole wheat bread
4 large eggs
⅓ cup milk
1 teaspoon vanilla
4 oz cream cheese, softened
3 tablespoons powdered sugar
1 teaspoon vanilla
1 teaspoon blueberry jam/freshly pureed blueberries
2 cups fresh blueberries
2 tablespoons butter, for cooking
Method: Beat the eggs, milk and vanilla in a bowl until mixed well. Pour into a shallow dish that will allow for dipping of bread completely. Keep aside. Mix the softened cream cheese, powdered sugar, & blueberry jam in a medium bowl with whisk until smooth. Spread about 1 tablespoon of cream cheese mixture on one side of each piece of bread. Make sure to spread evenly and all the way to the edge of the bread. Make a sandwich with the bread slices. Melt some butter in a pan, preferably a non-stick pan over medium high heat. Dip the sandwich into the egg mixture. Place the sandwich into the pan with the melted butter and fry for about 3 minutes on each side or until golden browned. Flip and repeat on the other side. Remove and serve immediately. Sprinkle with additional berries. Sprinkle generously with powdered sugar and serve with jam or syrup.
