Poha/Flattened Rice Croquettes

Ingredients
1 cup Poha/flattened rice flakes
1 large potato
1 cup grated carrot
1 cup grated processed cheese
3 green chilies, finely chopped
1/2 teaspoon ginger, finely chopped or minced
4 cloves garlic, finely chopped
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
2 teaspoon fresh coriander leaves, finely chopped
2 tablespoon bread crumbs
½ cup all purpose flour/maida
Oil for deep frying
Salt to taste
Method: Grate the cheese and keep it ready aside. Wash the poha and soak them in water for 10 mins. Then squeeze out the extra water and keep aside. Mash the boiled potatoes in a bowl. Add poha, grated carrots, green chillies, chopped ginger & garlic, red chili powder, turmeric powder, coriander leaves, and salt to taste, and mix well with the potatoes. Divide the potato-poha mixture into small ball portions. Take some oil in your palms, get one ball and smoothly round it, make a dent in the middle of the ball, and stuff good amount of grated cheese in it. Take some more of the prepared potato-poha mixture and cover the dent. Roll it in between your palms to form a ball. Repeat the same process with the remaining balls. In a wide bowl, mix the all purpose flour and water to get a flour paste. In another plate, spread the bread crumbs and keep aside. Heat a pan with oil for frying. First, dip the prepated croquettes in the flour paste and then roll it on the bread crumbs until evenly coated. Fry in oil until brown on all sides by turning them often. Drain the excess oil on a paper napkin. Enjoy with ketchup!
