Kappa Payasam/Tapioca Kheer

Ingredients

  • Kappa / Tapioca 250 gm

  • Milk 3 1/2 cup

  • Sugar 3/4 cup

  • Cardamom Powder 1/4 tsp

  • Almonds 6 nos, sliced

  • Black Raisins few

  • Ghee 1 tsp

  • Condensed Milk 1/4 cup

Method: Clean and cut tapioca into medium size cubes. Take a medium size sauce pan put water and add tapioca cubes and boil for 3 minutes, drain that water and put another water and boil tapioca until its cooked and soft. Drain water and keep aside. In a medium size sauce pan, take 3 cups of milk and keep it for boiling. Once bubbles start coming from the milk add sugar and stir well. Boil milk well. Stir in-between. Meanwhile mash the boiled tapioca with your hand, (don't put it in the blender or else it will become like a paste), and keep aside. Add mashed tapioca into the milk and stir well, cook until thick. Add the remaining 1/2 cup milk and boil well, stir in-between. Now add cardamom powder and mix well. Before removing from stove add condensed milk and mix well and remove from fire. Heat a small pan with ghee, once ghee melts roast the cashew nuts and raisins then add into the paysam. Serve once it cools down.
