Pineapple Payasam-Pineapple Pudding

Ingredients

Ripe Pineapple-1/2 of one pineapple chopped into small pieces

Sugar-1/2 cup or to taste

Thin Coconut milk-2 cup

Thick Coconut milk-1 cup

Condensed Milk-1/2 cup

Cardamom powder-1 pinch

Dried ginger powder-1 pinch

Ghee-1 tbsp

Cashewnuts and raisins- optional

Yellow color-1 drop (optional)

Method: In a heavy bottomed pan, cook the chopped pineapple with little water. While it gets cooked, heat ghee in a pan and fry the cashew nuts and raisins and keep aside. When the pineapple is done, add the ghee, sugar, and yellow food color and sauté well and boil for 2-3 minutes until it gets soft and mushy. Add thin coconut milk and condensed milk to the pineapple mixture and stir continuously until it starts to boil. At this point, add the thick coconut milk and mix well for a minute and remove from stove. Add the fried cashew nuts and raisins, cardamom powder, and dried ginger powder and mix well. Serve warm or chilled.
