Simple Sugar Cookies

Ingredients

  • 3/4 (175 mL) butter, softened

  • 1 cup (250 mL) granulated sugar

  • 1 egg

  • 1 tsp (5 mL) vanilla

  • 2-1/2 cups (625 mL) all-purpose flour

  • 1/2 tsp (2 mL) baking powder

  • 1 pinch salt

Method: In large bowl, beat butter with sugar until light and fluffy; beat in egg and vanilla. Whisk together flour, baking powder and salt; stir into butter mixture in 3 additions. Divide dough in half; shape into small balls. Wrap each in plastic wrap; refrigerate for 1 hour. Let stand at room temperature until soft enough to roll out, about 15 minutes. Between waxed paper or on lightly floured surface, roll out dough to 1/4-inch (5 mm) thickness. With 2-inch (5 cm) round cookie cutter, cut out shapes, rerolling any scraps and sprinkle colored sugar on each cookie. Using spatula, place cookies, 1 inch (2.5 cm) apart, on parchment paper–lined or greased baking sheets. Bake at 375 F oven until pale golden on bottoms and edges, about 10 minutes. Let cool for 1 minute on pans on racks; transfer to racks and let cool completely.
