Peas & Mint Soup

Ingredients
2 tablespoons unsalted butter
1 medium onion, chopped
3 cups vegetable broth
400 g frozen peas thawed or fresh green peas
¼ cup fresh mint leaves
¼ cup heavy cream
Salt & Pepper
Method: In a pot, melt butter. Add onion and sauté. Add 2 cups of broth and bring it to boil. Add peas and simmer for 2 mins. Remove pot from stove. Add mint and the remaining cup broth to the pot. Puree soup in a blender, adding water if the soup is too thick, until smooth. Season soup with salt and pepper. Serve it chilled or warm whisking some heavy cream on top.
