Sweet Corn & Potato Cutlets/Fritters

Ingredients
Corn cobs 10
Coriander 1/2 bunch
Green chillies (minced) 4
Breadcrumbs 2 cups
Potatoes 1/2 kg
Chopped ginger 1 piece
1 egg beaten
Salt to taste
Juice 1 lemon
Oil as needed
Method: First steam/cook the corn cob till the kernels are tender and cooked well. Remove the corn kernels with a knife and keep aside. Grind together the corn kernels, chopped ginger, chopped green chilies, coriander leaves, lime juice, & salt. In a bowl, mash the boiled potatoes. Add the corn mixture to the mashed potatoes and mix well to form into a smooth mixture. Make small balls and shape it into cutlets. Dip each cutlet into the beaten egg and breadcrumbs and keep aside. Heat oil in pan, and drop each cutlet and deep fry until they turn golden brown. Drain on an absorbent paper. Repeat with the remaining mixture to make more fritters. Serve immediately with tomato ketchup.
